Mmmmm! Couscous!
Couscous is SO easy to make, and you can make it as plain or fancy as you like.
For this recipe, I used:
2 cups of dried couscous
2.5 cups of liquid (1 can of chicken broth and enough water to make up the rest
about 1 cup of walnuts chopped
mixed herbs, cumin, salt & pepper
garlic
and one small onion
In melted butter and olive oil, saute the finely chopped onion in a large skillet- large enough to add your couscous to. Allow the onions to become transparent, and brown the bottom of the pan a bit.
Deglaze with chicken broth/ water mixtured. Add two or three cloves of garlic minced or pressed, along with the herbs and flavorings. Bring to a rolling boil and add couscous. Remove from heat, stir and cover for about five minutes. Couscous should be tender. Stir in the chopped walnuts. (Pine nuts work great too!) Fluff it with fork before serving. I like to add some Romano or other hard cheese, but this day we had none. I added a little shredded mozzerella and it was great. Top with cilantro or your favorite fresh herb. YUM!
