Roast

I want the most flavor for the least work when it comes to meals. I think I have finally found it.



What was left over after we attacked this roast!
The beef roast went in the crock pot with NO water or liquid. S&P and a dash of Italian herbs, then cooked on high for about four hours. The roast browned and carmelized nicely and had WONDERFUL flavor- more flavor than if I had added sauteed onions or had browned the roast before putting it in the crock pot. And of course it took no time at all.

With the vegies, I have stopped putting them in the crock pot along with the meat. Instead, I roast them in olive oil for about 40 minutes. Each veggie retains its own flavor instead of melding like it does in the crock pot, and they become carmely and nice. I throw them in with the roast at the last minute and the flavors mingle. Very nice.

We are eating much more meat than we did for many years, but in some ways it is easier than cooking veg all the time. Whew!
