Meat Pies!


The recipe for meat pies: 1 lb ground beef, 1/2 chili sauce, 2 tablespoons onion mix, premade (or not) pie dough. Mix/cook all ingredients. Cut pie crust into circles (I do about 4 in diameter) and fill small amount of mix on crust, top ...with another circle. Pinch sides, pierce with fork for ventilation. flash freeze. bake frozen 425 for 15 minuntes. ----- Okay the way *I* make them. Brown ground beef, mix no msg, no dairy, no tomato taco seasoning into beef. Spoon onto 4 inch circles - etc etc etc (chili sause and onion mix is to risky for cross contamination of allergens.
 
I dont like the idea of the chili/mexi seasoning, so will do a more traditional beef flavor.

More Freezer Cooking

OK! Gotta get these recipes down while they are fresh in my memory.

Ravioli Bake
(for two large lasagna pans)

2 bags cheese ravioli (I found round ones that are nice!)
Ravioli should be frozen, uncooked.
3 med. zucchini
2 bags frozen broccoli
meat from two 3-4 pound chickens
(toss all this and place in lasagna pan with olive oil

2 cans white sauce
1 or 2 diced onions
2 tblspn Italian herbs, with extra basil
salt and pepper
4 cups of chicken broth
2 cups mozzerella cheese
Mix this up and pour over pasta,chicken and vegies.
Seal well and freeze.



Healthier Cheesy Potatoes
makes 6 tall pie pans full

4# diced, frozen potatoes
2 heads finely diced cauliflower (dice the size of the potatoes), blanched for 2 minutes and cooled
2 pkg frozen green beans (about 2 pounds)
Toss all together in giant bowl.

2 pounds of grated cheddar
2 12oz tubs sour cream
2 cups chicken broth
1 cup dried onion flakes or two finely diced fresh onions
1 tblspn Italian herbs
salt, pepper

Combine all and put in pans.


Stuffed Shells

Large Pasta Shells, 2 boxes 80 total shells
3 Jars red sauce

2 large Ricotta (32oz ea)
1 large Cottage Cheese
6 eggs
1 pound shredded mozzerella
1 pint asiago cheese
2 heads garlic, peeled minced (can mince in food chopper with olive oil)
Italain herbs
salt and pepper

Cook pasta shells very aldente
rinse and hold in cold water

Mix all other ingredients, save red sauce together.

Pour 1/3 jar red sauce and 1 cup water into bottom of lasagna pan
lay in @ 28 shells in one layer, filled with 1 heaping tablespoon of filling
Cover with remaining jar of red sauce with enough water to fill the top of the jar while sauce is IN it. This should just cover the shells.
Flash freeze with top off, then wrap with foil and bag up for freezer.

Makes three large lasagna pans.

Hamburger Recipes for Freezer Cooking (Plus one Chicken and some BBQ Sauce!)

Ground Beef Stroganoff Casserole
Makes 4 9x13 pans for the freezer!
Ingredients:

3 17 oz pkg. Aldi's Schwabian Egg Noodles (Spatzle)
2 larged chopped onions (sauteed until translucent)
1tblspn cumin seeds( sauteed with onion)
3 to 4 lb. hamburger cooked
1/2 cup flour
2 teaspoon salt
1+ teaspoon. black pepper
1 head garlic pressed/minced
1 tblspn paprika
16 oz sliced fresh mushrooms. Half button, half portabella
20 oz can cream of mushroom soup
20 oz soup can water (can use half beef broth)
3 12 oz tubs sour cream
parsley to garnish

saute onions, cumin
place in extra-large bowl
add flour, paprika, s+p, garlic
mix
add all other ingredients, save noodles.

cook noodles to 2/3 doneness. oil to prevent caking, place in bottom of 9x13 pan.
Add mixed ingredient on top.
Top with 1/4 cup of Feta Cheese
Add fresh parsely before serving.
Assembly:

In skillet heat hamburger and onion until no longer pink. Drain grease from pan. Add flour, salt, black pepper, garlic, paprika, mushrooms, soup and can of water. Mix well and simmer 10 minutes. Remove from heat stir in 1 cup sour cream.



To Cook day of:

In a 2 quart casserole dish put in noodles and top with beef mixtures. Garnish with parsley. Bake at 350 degrees for 30-40 minutes until bubbly.

To freeze:
Pour noodles in a square foil pan. Top with beef mixture. Garnish with parsley. Freeze.

To Serve:
Thaw completely and uncover. Bake at 350 degrees for 30-40 minutes until bubbly.

REALLY GOOD Meatloaf!
Makes four small family meatloafs

2.5 to 3 pounds ground round/chuck
5 eggs
1 cup 5min Oats
2/3 cup butter crackers (Ritz)
1 1/3 cup sharp cheddar
1tsp salt, 1 tsp pepper
1 tblspn paprika
1/4 cup minced, dried onions
1/2 head minced fresh garlic
1/2 cup hfcsfree catsup

Put in 9X13 lasagna pan, bake 350 @ 1 hour. Very juicy and tender!
cut into four family servings, freeze.

Hawaiian Chicken

Frozen (or room temp) raw chicken breasts 2 to 4 depending on size
1 can pineapple with juice
3/4 cup bbq sauce
cover chicken with sauce in gallon baggie, seal and freeze.
Will marinate while thawing.
Grill, bake in lasagna pan, or crockpot entire contents
Serve with rice

Homemade BBQ Sauce

2 cup hfcsfree Catsup
1/3 cup vinegar
1/4 cup mustard
1/4 cup mollasses
1/4 cup onion flakes
2 tsp salt, pepper
1/2 cup honey
1/2 steak sauce (A1)
2 tblspn ground cumin
2 tblspn tumeric
1/4 cup brown sugar
fresh garlic (half head)
hot sauce to taste

Ginger would be great wit this too!!
